Mango Archar

So I was talking to a friend who is from India and he mentioned Archar which is a very difficult to make pickle recipe.I saw it as a challenge and proceed to make the stuff which takes 3 months to ferment.

I do not have a photo of the final product but it was excellent.

Cucumber Vinegar Mix-Wife post

We got a few Bobby Flay books from the library yesterday and we came across a recipe that
reminded me of a cucumber salad that my mom used to make so I called her up and got the
basics and then I added on top of that it goes something like this...

cucumber sliced and put in a bowl cover in salt, I prefer see salt but salt works just as well, set aside for an hour and then drain the water, this allows for a dried out but crunch cuc.
add chopped tomatoes
add chopped green beans
add slicely cut onion of your choice
for a variation add kidney beans or another type of bean
add a teaspoon of sugar
add roses sweetened lime juice (to preference)
add vinegar (to preference)
salt and pepper to taste
stir and put in refridgerator for a couple of hours before you serve stirring occassionally.
