BBQ Sauce Makin' Time the hotter the better


So I went to H-Mart and they had what they called Jamaican Peppers or what we call habaneros for $2 for half a pound.Needless to say all but 4 made it into my left over BBQ sauce consolidation of the refrigerator sauce.

Pork Butt pulled pork

Finally was able to find a nice boston butt this season has been a hard one to pickup the choice pork cuts and this one takes the cake!
I went a little light on the rub this time and used more of the garden herbs to make a spice rub.
Then I added cholula hot suace to the drip trap to create a nice hot sauce smoke flavor to the meat.
Sidney guarded the grill as he is the major pulled pork fan of the household.
Nice and charred on the outside with excellent burn ends the bone slide right out after 8 hours of smoking with hickory wood.

Wiener Time


One of my favorite ways to do a beer brat is to pan fry it as the beer caramelizes instead of steaming the sausage.Takes about 20 minutes to do it right and a beer and a half - Carlsberg works the best but any high sugar beer will do.
Finish it off with a bath of beer to make sure its fully cooked.

Shop Smart Shop H-Mart

Crab legs are one of our favorite and now living on the east coast its much easier to get sea food. The best part is going to the Asian market to get the nice fresh stuff 2 pounds of legs for $14 and $3 squid deal of a life time.I have never cooked squid before but I am a master google searcher and fiend of calamari.
I gave the squid a quick chop and bath in milk and eggs wash before coating them in panko bread crumbs and frying. Hit this one out of the park they were so good so every time I hit up H-Mart I have to get squid.
Boiled the legs in a nice seasoned broth - next time I make this I will write down what goes into the water.
This on the other hand is another thing I picked up at H-Mart Korean BBQ'ed Pork pre-marinated and some fresh japanese eggplant and okra which I deep fried in panko bread crumbs.

Grilled Pot Roast low and slow

So I had the ideal to grill a beef pot roast for 6 hours on 200degree heat.First thing I did was make a nicely loaded drip tray and beef broth to add moisture to evaporate and keep the meat tender.
Using a newly purchased weber rake I placed the seasoned beef on top of the grate and let it cook for the day away.


I highly recommend this method of cook roasts and think it could be used to do roast beef sandwiches just place the meat in a drip tray instead of the rack and make a nice broth with stout, beef bouillon, and spices.

Nothing goes better then chicken and ribs and with the new grilling season come new grilling racks to try out the perfect combo at the same time.2 Hours on indirect heat with a beer in the drip tray make this meat perfect.

Desert

I hate desert but I love the ones Won brings over cuz he knows no chocolate all fruit and keep it classy.This other cake is for my wife as she can haz chocolate.
